BUYING BULK BEEF

I am so glad you are interested in buying beef from us. Red Poll cattle is one of the most delicate breeds of beef cattle. 

Fill your freezer with a custom quarter, half, or whole bulk beef raised right here on our family farm. Buying custom bulk beef allows you to purchase up to a year’s worth of beef at one low price per pound. You pay the same price per pound for Ground Beef as you pay for Rib Eye steaks and Prime Rib roast.  No matter how you order your locally raised custom bulk beef, you’ll receive the maximum number of cuts for the size of beef you select. The quantity of each cut may vary due to the weight of the animal, the steak thickness you select, and the size of the roast you select.  Our farm-raised beef is processed at a local, inspected butcher shop where it is dry-aged for 14 days prior to processing. Dry-aging our beef allows the natural enzymes to tenderize the meat while dehydration concentrates the meat’s rich, natural flavor – giving you flavor-packed, tender steaks and mouthwatering roasts in every order of Little Creek Farm's bulk beef.

Average Yield From A Whole Beef When a 1,200lb animal is taken in for processing, we can expect an average yield of 60%, although that can range from 57% – 61%, and a 720lb hanging carcass weight (after the head, hide, and leg bones have been removed). The percentage of cuts yielded from a whole beef averages 48% of the hanging carcass; the cut yield can range from 45-50%. For a 1200lb animal with a hanging carcass weight of 720lbs, you will receive an average of 345lbs of beef. Our steers average 1,200lbs but the weight range is 1,000-1,400lbs depending on age, genetics, and time of year when we take them in for processing.
